PENNE PASTA

Penne pasta recipe


Ingredients:

Olive oil: 3 tablespoon
Pasta 250gms
Green chillies: 1 chopped
1 small onion: chopped
Tomatoes : 2 chopped
1/2 Red Capsicum: chopped
1/2 yellow capsicum: chopped
Ginger-garlic paste : 1 tablespoon
Coriander: chopped 8 - 10 leaves
Butter: 1 tablespoon
Cheese cube grated: 2

Spices:
Asafoetida : 1 teaspoon
Cumin seeds: 1 teaspoon
Black pepper : 1/4 th teaspoon
Red chilli powder : 1/2 teaspoon
Red chilli flakes: 1/2 teaspoon
Oregano: 1 teaspoon
Basil leaves: 8-10 leaves chopped
Tomato sauce: 1 tablespoon
Vinegar : 1/2 tablespoon
Sugar : 1 teaspoon
Salt : 1/2 tablespoon : for boiling
        : 1 teaspoon for cooking

Method:

Boil the pasta in water and add 1 tablespoon oil and 1/2 tablespoon oil in it.  Keeping stirring. Boil it for 30 minutes. Drain the water and place the pasta on cold water.  Again drain after 10 minutes. Set aside.
Take a deep frying pan and add 2 tablespoon of oil in it.  Add asfoedita, cumin seeds, green chilli and ginger garlic paste.  Add chopped vegetables and spices. Let it cook for 5 minutes.  Add the pasta.  Cook for another 5 minutes.  Turn off the gas knob and add vinegar. Now add butter and cheese.

The pasta is ready to serve.  Enjoy the delicious delicacy with your friends and family.

Easy Snacks : POHA

Poha
Morning & evening snack 


Ingredients:

1 cup puffed rice
1 green chilli: chopped
2 garlic cloves: chopped
1/2 inch ginger: grated
1 large onion: chopped
1 tablespoon: chopped coriander
1 teaspoon : red chilli powder
1 teaspoon : coriander powder
1 teaspoon : turmeric powder
1/2 teaspoon : chaat masala / fruit masala
2 tablespoon : oil
1 teaspoon: cumin seeds
1 teaspoon: musturd seeds
8-10 curry leaves
1 pinch : asafoetida
1 lemon
1 teaspoon : sugar
1 teaspoon salt

Method:
Take the puffed rice and wash in running water. Drain the water and set aside.

Heat oil in a pan.  Add asafoetida.   Add cumin seeds, musturd seeds, ginger, garlic green chillies,  curry leaves & onion.

Add the masalas. Turmeric, red chilli powder, coriander powder & salt,

Keep stiring for 3 minutes and then add the puffed rice which was set aside.  Add sugar.  Mix lightly. Do not break the puffed rice. Turn off the gas knob after 5 minutes of cooking.  Add lemon juice.  Sprinkle coriander & chaat masala.
Poha is ready to serve.

Local dessert : Phirni

Phirni:  Rice and milk preparation:


Ingredients:

1/2 cup : Rice (soaked in water)
250gms: Milk
1/2 cup :Rose petals (fresh)
5 tablespoon : Sugar
2 almonds: grated
1/4th tablespoon: Chia seeds (soaked 2 hrs).
5 strands : Kesar strands
1 teaspoon : Vanilla essence

Method:

Soak the rice for 2 hours. Grind the rice in a mixture and make a thick paste.  Take a pan and add milk to it. Bring it to boil and add the rice paste. Add all of the above ingredients except vanilla essence. Let the mixture cool. Add the vanilla essence.
Let it freeze. Serve in small bowls and garnish with dryfruits and rose petals.

Ever been to royal cities full of palaces and lakes? Well, Udaipur is worth a trip!  

It is an extremely beautiful place. Heritage palaces, serene lake views, rich and tasty food and beautiful Rajasthani attire!  Everything goes hand in hand.  



Best time to visit would be October to February. 

Shopping stuff:  Ethnic printed long skirts, beautifully printed palazzo pants, colorful dupattas and ethnic jewelry.  If you have a thing for colors, this is your place! 

Entertainment:  If you are going with your loved one, you can spend your evenings watching puppet shows and folk dances. 

Food:  Rajasthani thali , Gatte ki sabzi ( gatta curry), Ker-sangri sabzi.


The place is picturesque, so don’t forget to carry your camera!

Maldivian food




Local Maldivian Gulha Delight:

Maldives is a country where people are extremely fond of sea food. Fish is one of the Major attractions.  But Maldivians do not have the system of eating raw fish.  The eat it in the form of fritters. The fish is coated with a batter mix and then fried. The variety of fishes which are eaten there are Skipjack Tuna, Yellow Tuna, Frigate Tuna, Bigeyescad, Wahoo, Mahi-Mahi and Makeral scad. Above is a picture from Gan Island's local village where I could relish this lovely delight. Have a Look!

How To Make Potato Recipes! DRY POTATO CURRY

Lets begin with yummy potatoes!
I am sharing with you a potato recipe which can be consumed along with Chapatti or breads.

DRY POTATO CURRY: SUKHE ALOO KI SABZI

Serves 2 Individuals:

Ingredients:

Basic Vegetable:
3 Big Potatoes, Cut into square cubes.

Greasing:
Oil 1 tablespoon

Spices:
1 pinch dry basil powder and pudina (Mint) powder
½ teaspoon Turmeric powder
½ teaspoon Red chili powder
¼ teaspoon Garam Masala ( Dry powder made out of spices)
Salt as per your requirement.
¼ teaspoon Coriander powder

Seeds:
Mustard seeds – 1.2 teaspoon
Curry leaves 7-8 leaves
Green Chili Crushed , ½ teaspoon
Cumin seeds – ½ teaspoon
Flavor:
Lemon Juice -  ½ tablespoon
Garnishing: Coriander leaves

Procedure:
Place a large cooking pan on medium heat.
Grease it with oil.
Add all the seeds and add the turmeric powder.
Add potato cubes, curry leaves and Green chilies.
Add the remaining spices listed above.
Add salt as per taste.
Sprinkle some 5 tablespoon water on it.
Cover and cook for some time and keep stirring for a while.
Remove the pan from the heat once the potatoes are cooked and add lemon juice to it.
Garnish with coriander, basil power and mint powder.

Note: You can completely omit green chilies from the recipe as we already have sufficient red chili powder in it.


Serve hot and eat with Chapatti or breads.
